Margherita Panini Bites


These are delicious people! Get ready for an appetizer that is actually refreshing. Mmmm I wish I had some right now. In all seriousness you should try making these at your next party/get together. They hardly require any prep and are fairly inexpensive as well.

What you Need:

A loaf of ciabatta bread (or crusty Italian bread)

Pesto sauce (we bought it premade but you could make your own I suppose)

Fresh basil leaves

Mozzarella slices

Roma tomatoes

Olive Oil


How to Make it:

We had a loaf of ciabatta bread that we cut in half  to create a top and bottom of our sandwich, and then we cut the big sandwich in half so that you have two large sandwiches with a top and bottom. You can really make them however you want depending on the size and type of bread you buy.

Next,  spread a thin layer of pesto sauce on the bottoms piece of both sandwiches, next a layer of basil leaves, slices of mozzarella, and lastly tomato slices. Place top of sandwich on.

Brush both sides of the sandwich lightly with olive oil and then grill in stove top grill pan, indoor grill ( a george forman grill would work well), a skillet, or a panini press (that's what we used).

When they are toasted and the cheese is melted remove and then cut into smaller individual triangles. The bread was very crusty so we had to use a butcher knife to get through all the layers since a bread knife seemed to just tear it apart.

Serve warm.

If you have leftovers you can heat them up later by throwing them in the oven for a few minutes too.
